Healthy Blackyard Summer Salad

Salad Greens
  • 3 cups romaine lettuce
  • ¼ cup Low Fat balsamic vinegar

  • 2 chicken breasts

Summer Slaw

  • 1 cucumber
  • 1/4 cup red cabbage
  • ½ cup watermelon [seedless] cut into 3 inch sticks
  • 1 Tbs. chopped cilantro
  • 2 tsp. sesame seeds
  • ¼ cup rice wine vinegar
  • 2 tbs. olive oil
  • 1 lime

salt and pepper

Grill chicken breast with salt and pepper to taste. Place breast on top of tossed romaine and salad dressing with black pepper to taste. Gently mix thinly sliced cucumber with chopped cabbage, chopped cilantro, sesame seeds, olive oil, rice wine vinegar and squeeze of lime. Add the sliced water melon last to preserve the acid. Place summer slaw on top of chicken and enjoy.
