Healthy Black Bean Shrimp and Scallops

Serves Four
  • 1.5 lbs Shrimp IQF Large
  • 1.5 lbs Scallops
  • 1 Fresh Red Pepper Sliced
6 Scallions
  • 1.5 Cups Chinese Snow Peas
  • 1 TBS Fresh Pressed Garlic
  • 3 TBS Black Bean Sauce / House of Rice on Hayden just south of Osborn next to gas station

Also available in the Asian section of many grocery stores

  • 1 TBS Rice Wine Vinegar
  • 3 TBS Peanut Oil
  • 1 TBS Chili Paste

Salt – to taste
Crushed Black Pepper – to taste
Cook some brown rice for a great low glycemic carb for the dish!

Medium to Medium High Heat Sautee’ the shrimp and scallops with 3 TBS of peanut oil Use salt and pepper to taste.

In a separate skillet use PAM cooking spray liberally. Sautee the peppers, scallions and Chinese Snow Peas. Then add garlic and stir until fragrant. Next, and add mixture of:


Per lbs of fish
  • 3 TBS of black bean sauce
  • 1 TBS of chili paste
  • 1 TBS of rice wine vinegar

Continue cooking/stirring until crackling hot and add to fish. Finish stirring for one minute and serve.
